Italo Bassi: Technique, Identity, and International Vision

Italo Bassi’s journey is part of the collaboration between Vinibuoni d’Italia and the Consorzio Prosecco DOC. Eight Italian chefs interpret their cuisine through a signature dish, paired with a Prosecco DOC selected by Alessandro Scorsone. A narrative that weaves together territories, experiences, and visions, celebrating the meeting between fine dining and one of the most appreciated Italian wines worldwide.

From Romagna to the international stage, Italo Bassi has built his career through iconic kitchens such as Trigabolo and Enoteca Pinchiorri. In 2015, he founded Confusion, the first Michelin-starred restaurant in Costa Smeralda, and in 2025 he earned a second star with Finestra. His cuisine balances technique, identity, and vision, creating experiences that go beyond the plate.

Process:

Recipe: Tagliolini with Sardinian blue lobster
Confusion – Porto Cervo

Ingredients

  • 00 flour, egg yolks.
  • Coconut milk, ginger, lemongrass, lime zest.
  • Cherry tomatoes.
  • Sardinian blue lobster.
  • Extra virgin olive oil, garlic, icing sugar, basil, salt.

Method

Knead the flour and egg yolks into a smooth dough, let it rest, then roll it thin and cut into tagliolini.

Score the cherry tomatoes, blanch them, cool, and peel. Season and cook them slowly in the oven until confit.

Reduce the coconut milk, infuse with ginger and lemongrass, strain, and finish with lime zest and salt.

Cook the lobster, cool it, and extract the meat. Sauté it in a pan with olive oil, add the tomatoes, and moisten with a little pasta cooking water.

Cook the tagliolini, drain, and toss with the sauce, finishing with olive oil and basil. Plate and complete with the coconut sauce.

A dish of great complexity, combining the sweetness of lobster with exotic notes and aromatic depth. A rich structure that calls for balance and precision. Paired with Prosecco DOC Brut: floral, fruity, and mineral, bringing freshness and a clean, harmonious finish.
