A two-thousand-years history

The very ancient origins of Prosecco wave together history and legend. In the composition of Plinio il Vecchio, in the 1st century A.D., in fact, it is said that the Empress Livia, wife of Octavian Augustus, lived many years thanks to the legendary virtues of Pucino wine, whose production has been placed by historians precisely in the territory of the current province of Trieste, in particular in the Prosecco area.

Anche diversi documenti del ‘500 menzionano i vini che provengono dalla località di Prosecco, tra Duino e Trieste. Ѐ tra ‘700 e ‘800, però, che il vitigno si diffonde, soppiantando altre colture e imponendosi come il vino principale dell’attuale zona di produzione.

Iniziano così le vicende moderne del Prosecco: un percorso che alla fine degli anni’60 segna una delle sue tappe fondamentali, con il riconoscimento della DOC, la Denominazione di Origine Controllata.

Negli anni successivi, Prosecco DOC si afferma in Europa e nel mondo come eccellenza italiana: la storia di un grande successo internazionale iniziata duemila anni fa.

FROM THE VINEYARD TO THE CELLAR

Discover how the real Prosecco DOC is made

Between the end of August and the beginning of September, the grapes, from which Prosecco DOC will be made, reach the right level of ripeness: it is time to harvest.

The harvested grapes arrive quickly at the cellar: here they are delicately pressed, starting the winemaking process.

After the first fermentation which lasts around 15 – 20 days, the production process differs depending on the type of Prosecco to be produced. To obtain the characteristic bubbles, a hallmark of the Frizzante, Spumante and Rosé types, a second fermentation of variable duration is required.

Once the fermentation phase is completed, the wine will undergo the tests required by the specifications, to verify its origin and test its organoleptic and sensorial characteristics.

The original Prosecco DOC is born like this: thanks to careful processes refined over time, to obtain a wine with an unmistakable personality.
