Milan, July 2026 – The first stage of the Prosecco DOC Chef Residency has come to a close. This project, promoted by the Prosecco DOC Consortium in collaboration with Tuorlo, was created to transform the kitchen into a space for research, training, and cultural exchange.
The first residency placed Brazil at the center of this journey, demonstrating how a single week can change the way we view a cuisine. For nine days, chefs, professionals, and young talents shared techniques, ideas, ingredients, and perspectives, fostering an authentic dialogue between different culinary traditions.
Leading this experience were Chef Mauricio Zillo and food consultant Danilo Nakamura, who guided participants on a journey of discovery through Brazilian culinary culture, exploring not only its flavors but also the rituals, customs, and meanings that make the dining table a place of connection.

Born from a simple question—what happens when different culinary cultures sit down at the same table?—the Prosecco DOC Chef Residency found a concrete answer during its first residency: taste becomes a common language, the kitchen a space for exchange, and conviviality a tool for forging new connections.
The program concluded with a closing dinner conceived and prepared collaboratively by the Resident Chefs and the young participants. More than just a menu, it was the story of a week of exploration and experimentation, in which the flavors of Brazilian tradition met the sensibilities, techniques, and local products of Italy, accompanied by the diverse expressions of Prosecco DOC.

A heartfelt thank you goes to Populus, whose music set the pace and atmosphere for the evening; to Tavolata for the decorations that helped make the experience even more immersive; and to the Maestro Martino Association for sharing the talents of its masterclass participants along with all the students involved.

Participating wineries: Borgo delle Rose, Brilla!, La Marca, Maschio dei Cavalieri, Masottina, Mionetto, Perlino, San Simone, Villa Sandi, Viticoltori Ponte.

With the conclusion of the residency dedicated to Brazil, the Prosecco DOC Chef Residency continues its international journey. The next event will be dedicated to South Korea, to continue building new dialogues between cultures, people, and regions through the universal language of cuisine.
