PROSECCO IS FOR EVERYONE

With its flowery, fruity bouquet and its fresh, light flavour full of verve, Prosecco DOC is the ultimate simple but sophisticated wine which personifies the unique Italian lifestyle.

Prosecco DOC can be SPUMANTE (sparkling), FRIZZANTE (semi-sparkling) and TRANQUILLO (still) depending on the perlage.

PROSECCO DOC SPUMANTE, the most famous and popular variety, has a fine long-lasting perlage. Prosecco DOC Spumante can be BRUT, EXTRADRY, DRY or DEMI-SEC depending on the sugar content.

PROSECCO DOC FRIZZANTE has a light, less lingering perlage.

PROSECCO DOC TRANQUILLO is a still wine (with no perlage).

PROSECCO DOC SPUMANTE

  • Colour: pale yellow with varying intensity, bright with a persistent mousse;
  • Bouquet: fine, distinctive, typical of the grapes it comes from;
  • Flavour: from Brut to Demi-sec, fresh and distinctive;
  • Minimum alcoholic strength: 11,00% vol;
  • Minimum total acidity: 5,0 g/l;
  • Minimum dry extract: 14,0 g/l;
  • Pressure: higher than 3 bar.
  • BRUT when the sugar content is less than 12 g/litre.
  • EXTRA DRY when the sugar content is between 12 and 17 g/litre.
  • DRY when the sugar content is between 17 and 32 g/litre.
  • DEMI-SEC when the sugar content is between 32 and 50 g/litre.

 

PROSECCO DOC FRIZZANTE

  • Colour: pale yellow with varying intensity, bright with obvious bubbles;
  • Bouquet: fine, distinctive, typical of the grapes it comes from;
  • Flavour: dry or sweet, fresh and distinctive;
  • Minimum alcoholic strength: 10.50 % vol;
  • Minimum total acidity: 5,0 g/l;
  • Minimum dry extract: 14,0 g/l;
  • Pressure: between 1 and 2.5 bar.

 

Prosecco DOC produced with secondary fermentation in the bottle is well worth a mention here; it is a traditional technique dating back to the late 1800s, where the wine is aged with the grape’s natural yeasts and a thin film forms on the surface, creating a smoother rounder flavour on the palate. When the wine undergoes this particular process, it will say “Secondary fermentation in the bottle” on the label.

PROSECCO DOC TRANQUILLO

  • Colour: pale yellow;
  • Bouquet: fine, distinctive, typical of the grapes it comes from;
  • Flavour: dry or sweet, fresh and distinctive;
  • Minimum alcoholic strength: 10.50 % vol;
  • Minimum total acidity: 5,0 g/l;
  • Minimum dry extract: 14,0 g/l;
  • Pressure: lower than 1 bar.
